The bright sunlight helps balance the sweetness and acidity of the apricots, which in turn offers a slight almond taste. Bonne Maman selects only the dark flesh of the apricots with sufficient firmness to keep the tenderness after cooking. The ingredients of the jam are simple and natural, with small pieces of melting fruit to savour the freshness of apricots.
